Chole bhature is a an all time favourite Punjabi dish. Chole bhature can be eaten in breakfast as well as in lunch. Chole bhature is a combination of chickpea curry served with deep fried flour poori. Chole is prepared with chick peas and bhatura is a fried Indian bread made of all purpose flour/maida. Chole and bhatura are make for each other, so I am giving the recipe for both together in a single post. When i was in delhi and my delhi’s friend teach me panjabi chole bhature recipe in simple way . Today i am going to give you how to make Punjabi Chole Bhature following this easy recipe with simple step wise pictures.
Preparation Time : 45 mins. Cooking Time : min 1 hour Serves : 3-4
- All purpose flour/Maida – 2 cups
- Semolina/Rava – 2-3 tsp
- Baking soda Powder – 1-2 tsp
- salt to taste
- Sugar – 1/2 tsp
- Dahi (Curd) – 1 cup
- Oil for deep frying
For Chole (chick peas) :
- Chick peas/channa – 1-2 cups
- Onion – 1
- Tomato – 1 or 2
- Green chilli – 2
- Ginger,Garlic – 2 t bsp
- Cumin seeds – 2 t bsp
- Turmeric powder – 1/4 tsp
- Chilli powder – 1 or 2 tsp
- Chole masala powder – 1 tbsp
- Bay leaf – 1
- Red dry chilli – 1
- Tea bag or tsp tea leaves , tied in a muslin cloth (optional)
- Salt to taste
How to make Bhatura step by step :
Step 1 : In a bowl mix together maida, curd, rava, salt, sugar and baking powder. Make a slightly stiff dough(don’t add water because curd has water if needed then add water) just as you make for poori.
Step 2 : Cover it and keep it aside for 1 hours or more. I cover it only for 1 hours.
After 1 hours- Your bhatura dough is ready. Knead the dough again and make small sized balls out of it.
Step 3 : Dust the ball with maida (all purpose flour) and roll it out into thin puri.
Step 4 : Heat oil in a kadai and add maida puri ,Fry both sides until golden brown. Then remove it from the oil with a slotted ladle and serve hot with chole.
Now main Step How to make Chole /Chick peas step by step :
Step 1 : Soaking chole/chick peas a night before- clean, wash and soak chole overnight or use ready to use chick peas ( get it from market or mall)
Step 2 : Add chole to a pressure cooker and add, Tea bag or do which shown in below image,salt and water. Pressure cook for nearly 15 minutes or until chole are soft and tender.Keep aside.
Step 3 : Add ginger, garlic, tomatos, coriander leaves, green chillies and into grinder and make paste.
Step 4 : Heat Oil or ghee in pan and add bay leave,cumins seeds, chopped onion. Once the onion becomes golden brown and add paste.
Step 5 : If you want thick gravy then add cooked chick peas into grinder and make paste.
Step 6 : Now add turmeric powder, red chilli powder, chole masala, salt to taste and saute for 2 minutes. Then add cooked chole/chick peas and mix well.
Step 7 : Add some water and Stir well for 5-6 min. Serve Chole bhature and with rice .
